Jakarta - It is undeniable that natrium/sodium (salt) has an important role inside body as an essential nutrient to create a healthy, strong and active life. Excess or deficiency of sodium have a risk to trigger some health problem. If excess, the effect will be various degenerative diseases such as hypertension, stroke, heart attack, and others. If deficient, the effect is impaired muscle and nerve function, impaired blood sugar control, and others. So, how to balance and control salt intake?
PT AJINOMOTO INDONESIA in collaboration with PT Rumah Inovasi Natura held a Webinar Event: "The Role of Umami as a Way of Control Nutritional Intake in Improving Health", as an effort to support people in Indonesia to stay healthy by disseminating informative facts about Umami and Monosodium Glutamate (MSG) amidst the COVID-19 pandemic.
This webinar is a series of events that will be held three times start in September 2021. One of the speakers at this webinar event, presenting Dr. Ir. Annis Catur Adi, M.Si, Nutritionist & Lecturer at the Faculty of Public Health – Airlangga University. The number of participants in this webinar reached 491 and most of them work and study as nutritionists, dietitians, and students of the Nutrition & Public Health Study Program.
According to Dr. Annis, there are several ways to control salt intake, which are in accordance with the habits or consumption patterns of the Indonesian people. "It is undeniable that the habits of the Indonesian people in making dishes use a lot of herbs and spices that have a delicious taste, while the various herbs and spices itself also contain quite a lot of salt. Well, the most appropriate way if our cooking uses a lot of various spices is by adding only less salt," said by Dr. Annis, at the webinar session.
"If we want the food we consume to have a delicious taste, but also want a low salt diet, using Umami seasoning like MSG can be a solution. Many studies abroad, such as in Japan, show that the use of MSG can be a low-salt diet strategy. This is because the sodium content in MSG is only 1/3 of the sodium content in regular salt," he continued.
