Jakarta, December 2024 - Ajinomoto Indonesia Group (Ajinomoto) is actively campaigning for the Smart Salt concept, which is one of the activities of Ajinomoto Health Provider to encourage the implementation of a healthy lifestyle for the Indonesian people and help extend healthy life expectancy. Ajinomoto Health Provider is an integrated sustainability initiative from Ajinomoto Indonesia, including activities that support the implementation of a healthy lifestyle and environmental sustainability. Seeing the potential of students in the Hotel Management Study Program (Prodi), Ajinomoto Professional held a Food Service Seminar at the Hotel Management Study Program, Binus University, on November 21, 2024, at the Restaurant Laboratory, Anggrek Campus, West Jakarta. This was done as an effort to support prospective Indonesian culinary entrepreneurs in creating various healthier and more profitable product creations, by providing informative facts about MSG, the Smart Salt concept, and several interesting menu inspirations that can be implemented in the culinary business.
In this Food Service Seminar, Binus University Hotel Management Study Program students were given an understanding of the advantages of Ajinomoto Professional products that are widely used in the food service industry, as well as various comfort food menu inspirations that meet balanced nutrition guidelines and are profitable for culinary businesses in the future.
Andalina Novyanti, Head of Horeca Dept – PT AJINOMOTO INDONESIA
"This time, Ajinomoto, which also has a food service business, collaborated with Binus University to introduce our products with sample support that can be used by students during cooking practices on campus and provide education about the food service business. Hopefully, this information from us can inspire and motivate fellow professional chef candidates in building or entering the culinary business in the future. As an Ajinomoto Health Provider, we also explain Ajinomoto Indonesia's efforts in encouraging the implementation of a healthy lifestyle in society with Smart Salt concept. We hope that the results of this collaboration can provide a good impact and value for the academic community of Binus and Ajinomoto Indonesia," said Andalina Novyanti, Head of Horeca Dept - PT AJINOMOTO INDONESIA
"As wise consumers, we need to pay attention to what foods and drinks we consume to avoid various metabolic diseases such as diabetes, high cholesterol, hypertension, and heart attacks in the future. This is very important because friends are people who have the potential to determine future culinary trends, who will present various food creations to consumers. What I share this time is one of the efforts to reduce the risk of metabolic diseases, hypertension, with the concept of Smart Salt," continued by Andalina.
"Smart Salt is a campaign that Ajinomoto Indonesia initiated as an effort to extend healthy life expectancy and encourage the creation of a healthy lifestyle in the community, by reducing some of the use of salt in daily cooking activities, and replacing it by adding a little MSG. For example, in cooking chicken soup, from the usual 2 teaspoons (tsp) of salt into 1 liter of broth, it is enough to change it to 1 tsp salt + ½ tsp MSG, with that tip, we have implemented the concept of Smart Salt. Live healthier by reducing the use of salt in processing food, but still being able to get a delicious taste of food. This Smart Salt concept is also in line with the recommendations of the Indonesian Ministry of Health regarding reducing sugar, salt, fat (GGL) intake. So, for friends who are prospective entrepreneurs in the culinary field, it is better to also follow the recommendations to limit the use of sugar, salt, fat in their food menu creations. After this, my colleagues from the Ajinomoto Professional team will share inspiration for creating menu dishes that are in accordance with balanced nutritional guidelines and of course profitable for the culinary business in the future," he continued. After Smart Salt concept education session, the Ajinomoto Professional team provided a sample of 'tori no suimono' (Japanese chicken soup) menu for a taste test session. In this session, each participant from student of Binus Hotel Management Study Program can taste and differentiate the ‘tori no suimono’ menu which is only given table salt, compared to the ‘tori no suimono’ menu which has a reduced portion of salt and add a little amount of MSG, AJI-NO-MOTO® PLUS®.
On this occasion, Ajinomoto Professional team also invite Chef Dedes Dwi Ratna Sari - Executive Chef from STUBE GROUP Jakarta, who provided 5 comfort food menu inspirations: Beef Black Pepper Popia; Beef Black Pepper Wraps; Chicken Maryland with White Sauce; String Beans & Herbs Potato; Sushi Sandwich with Beef Maranggi Satay, to fellow students of the Binus Hotel Management Study Program. The five menu inspirations represent the Asian, Western, and fusion (Japanese Indonesian) menu categories. This Food Service Seminar activity from Ajinomoto Indonesia will be presented again in January 2025 targeting universities that have Hotel Management Study Programs.
