Preparation
- Cut the Potato and Carrot. Set aside
- Sautee shallot and garlic with oil until fragrant. Put ginger, whole White pepper, Cinammon, Candle nut,
- Nutmeg, Clove, Cardamom, and Anistar, sautee until fragrant.
- Heat the water for 3 liter until boil
- Put Oxtail meat that has been blanched and cleaned to the boil water
- Put stir fry spices to boil water, mix well and cook within ± 2.5 hour until reduce for 1 liter of stock
- After 1 hour put the salt, AJI-NO-MOTO®, gula and Masako® Sapi. Mix well
- When it almost cooked put the potato and blanch for 10 - 15 minutes. Set aside
- Put the carrot and blanch for 4 minute. Set aside
Plating
- Put the stock of oxtail soup has been strain to the bowl for 200ml
- Serve the Oxtail Soup with slice leek dan fried onion
