Easy Way to Make Ajitsuke Tamago (Ramen Egg)

Ajitsuke Tamago / Ramen eggs are made by marinating Process. The basic ingredients for marinating ramen eggs is shoyu, sake and mirin, but if you want to use halal ingredients, you can substitute shoyu, water and halal mirin or corn syrup in a ratio (1:1:1) without a heating process.
We can also add various spices to the marinade. However, with the addition of other spices such as garlic and ginger, will require a heating process so that these ingredients can be mixed perfectly.
Things to consider in making egg ramen:
1. Cooking eggs
Put the eggs into boiling water that has been reduced to a low heat, so that the eggs didn’t crack. You can add vinegar and salt to the water to make it easier to peel the eggs after cooked. Cook for 5 - 6 minutes to make soft eggs. Put the eggs into ice water for 15 minutes after they are cooked to stop the cooking process. Peel the eggshell from the top to the bottom.
2. Making Marinade Sauce
Soak the eggs in the well-mixed marinade sauce until they are covered all over the surface in a closed container. Marination process ideally can be done for 8 – 24 hours in the chiller. And the eggs are ready to be served.
