Boiling Beef

  1. Heat water and boil the meat for 1 hour.
  2. Remove and rinse the meat with running water.

Broth

  1. Heat a pan, saute the shallots and garlic until fragrant.
  2. Add cardamom, nutmeg and star anise, stir-fry until fragrant. Set aside
  3. Heat water until boiling, add beef ribs
  4. Add the stir-fry spices, add lime leaves, galangal, lemongrass and ginger.
  5. Cook for 1 hour until the weight reduces.
  6. Strain the sauce and separate the meat

Serving

  1. Heat the broth and beef ribs until boiling
  2. Add boiled potatoes and carrots
  3. Add salt, sugar, Ajinomoto® Beef Extract Powder Seasoning, and green onions, cook until it reaches final weight
