Boiling Beef
- Heat water and boil the meat for 1 hour.
- Remove and rinse the meat with running water.
Broth
- Heat a pan, saute the shallots and garlic until fragrant.
- Add cardamom, nutmeg and star anise, stir-fry until fragrant. Set aside
- Heat water until boiling, add beef ribs
- Add the stir-fry spices, add lime leaves, galangal, lemongrass and ginger.
- Cook for 1 hour until the weight reduces.
- Strain the sauce and separate the meat
Serving
- Heat the broth and beef ribs until boiling
- Add boiled potatoes and carrots
- Add salt, sugar, Ajinomoto® Beef Extract Powder Seasoning, and green onions, cook until it reaches final weight
