A Simple Way to Make Yakitori Tare with SAORI® Teriyaki Sauce

Yakitori is a typical Japanese satay which generally uses chicken meat skewered with kushi (skewers). In the cooking process, Yakitori is usually seasoned with sauce (tare) or salt (Shio). This time we will make Yakitori Tare using SAORI® Teriyaki Sauce.


Check out the following tips:

#1 - Use wooden yakitori skewers (teppo kushi)

These thin skewers are pointed with flat ends, making it easy to pick up and flip the skewers on the grill while cooking.

#2 - Soak the Teppo Kushi first

Soaking Teppo Kushi in water doesn’t only prevent the skewers from burning on the grill, yet it also makes the process of skewering the meat easier. Soak the skewers for an hour before you start cooking

#3 – Use boneless chicken thighs

Use boneless chicken thighs for a juicier Yakitori texture with the same cuts for optimal results during the cooking process.

#4 – Compress the chicken during the Yakitori making process

The denser the chicken pieces, the less moisture they lose when they’re cooked. Leaving too much space between the skewer pieces can dry out the meat quickly if it is exposed to high heat.


For the application, let's check the following recipe:

1. Marinate the chicken first using AJI-NO-MOTO® PLUS® and ground

     white pepper.

2. Skewer the chicken using teppo kushi (60g/3 pcs per skewer).

3. Prepare the ingredients for making Tare:

90g SAORI® Teriyaki Sauce

45g Honey

60g Shoyu/soy sauce

150g Water

6g fried garlic

4. Heat water, Shoyu, SAORI® Teriyaki Sauce and honey over simmer heat and add fried garlic, cook for 5 minutes.

(SAORI® Teriyaki Sauce makes the food smell even more delicious during the grilling process because it is made from selected ingredients that have been adapted to Indonesian tastes)

5. Grill the Yakitori over charcoal and make sure all surfaces are completely burned.

6. Dip into Yakitori Tare and grill again (repeat the process 2 - 3x) until    

     getting the perfect color.

7. Serve while it’s warm.
